Shannon Thigpen's famous oatmeal snack recipe

My friend and SHINE Family member, Ms. Shelah, says this healthy snack is a staple in her home.  Thank you, Ms. Shelah!

Peanut Butter Balls

3/4 cups oatmeal
2 Tablespoons honey
1/4 cup peanut butter
1/4 cup walnuts (or nuts of choice)
She also adds vanilla extract and cinnamon, too

Mix everything together.  Refrigerate for at least an hour.  Roll into balls.  refrigerated in a Tupperware container and snack on them during the week.  Enjoy!
