I love this recipe because it is versatile, healthy, filling, and will help you to lose weight. You can vary the recipe based on what you have at home and what you like.
1. Soak beans overnight if using fresh beans. 2. Rinse beans. 3. Add the trinity (onion, carrot, and celery) 4. Heat olive oil. 5. Saute. 6. Add garlic. 7. Season. 8. Add beans. 9. Add vegetable stock (and water to cover, if necessary.) 10. Cover, simmer 45 min to an hour at low heat until beans are tender. 11. While simmering beans, saute and season mushrooms in a little olive oil. 13. Add mushrooms to pot. 14. Add spinach
It is delicious! I used half a bag of 15-bean soup. You can literally use whatever bean you like. No salt season (like Dash), cumin, turmeric, cayenne pepper, black pepper, onion, garlic. I little salt and pepper on the mushrooms. Season the soup at the end with a little Lawry salt, just enough to bring out the taste. Enjoy!
