I have a shake almost morning and several times a week I will have salad.  I can easily get 4-5 or more servings of vegetables for lunch with one delicious salad.  Remember, a serving of vegetables is 1/2 cup cooked or 1 cup uncooked.  Also, keep in mind you, it is ideal to have 9 or more servings of fruits and vegetables each day.  Do I do that everyday?  No.  That is why I supplement.   However, I try my best to pack in as many natural sources of vitamins as possible.   Here is a super simple super scrumptious salad.

Ingredients:

  • Mixed greens – for a large salad, at least 2 or 3 cups
  • fresh fruit – whatever fresh fruit you like and whatever you have.  I use strawberries and blueberries a lot
  • a quarter cup of walnuts (or whatever seeds you like
  • 1-2 Tablespoons of gorgonzola cheese
  •  1 Tablespoon of rasberry dressing
  • fish, shrimp, or chicken (optional)

For a family or party, I prepare a large container (or 2) of the mixed greens alternating with the fixings.
