Nutty Granola
from Prevention Magazine

3 cups old-fashioned rolled oats
1 cup raw almonds
1 cup unsalted, dry-roasted peanuts
1/2 cup unsalted mixed nuts
1/2 cup honey
1/4 cup canola oil
1 Tablespoon almond extract
1 Tablespoon cinnamon
1 teaspoon nutmeg

1. Heat oven to 300 degrees F with rack in the center position. Stir together oats, nuts, and 1 teaspoon salt in a large bowl. ( I never use salt).

2. Combine honey and oil in a large measuring cup. Stir in almond extract, cinnamon, and nutmeg. Gradually add to oat mixture, stirring well to coat mixture evenly.

3. Line large baking sheet with parchment paper. Spread granola evenly on baking sheet. Bake until golden, 20 to 25 minutes, stirring every 5 minutes. Let cool before serving. NOTE: I don’t stir it at all. It bakes in one big batch, and I break it up with a wooden spoon and store it in a large mason jar.

Nutrition (per 1/4 cup and based on the ingredients listed here): 206 calories, 6 g protein, 19 g carbs, 3 g fiber, 7 g sugars, 13 g fat, 2 g sat. fat, 96 mg sodium.
