I like to double this recipe.
It is so good, and super easy!
-8 servings
1 T EVOO (extra virgin olive oil)                                                                                                       
1/2 cup carrot
1/2 cup celery
1/2 cup onion finely chopped
2 cloves of garlic minced
4 cups of water
1-14.5 oz of diced tomato undrained
1 tsp dried basil leaves
1/2 tsp ground black pepper
1 cup ditalini uncooked; or orzo
1 can of red kidney beans undrained
In a large saucepan over medium heat add vegetables and cook 10 mins or until tender.
Add water, tomato, basil, pepper, heat to boil.
Stir in pasta.  Reduce heat to medium.  Cook 10 mins stirring frequently.
When pasta tender stir in beans.
Add a little olive oil and grated cheese if you like.
