Ever heard of soy curls? I hadn’t either – until my friend Tara gifted me a bag and told me I had to try them.  I was skeptical at first, but wow…what a discovery! Soy curls are a plant-based protein made simply from whole soybeans. Once you rehydrate them, they take on a hearty, almost chicken-like texture – perfect for stir-fries, tacos, or bowls.

Soak, drain, season, and saute.
The next day, I tossed them into a veggie stir fry- and spoiler alert: I gave it a thumbs up!
