This recipe is delicious and super easy!  This is an Amish recipe from Dutch Country, PA.  Poppy shared this recipe with me recently.  I contemplated sharing it since it has a lot of sugar and white flour.  However, I know it is healthier than many cakes you and pies most of you are eating this time of year.  I want to do a little more experimenting and share a healthier version of this recipe later.  I intend to do just that in the future.  In the meantime:

  • 3 cups flour
  • 2 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 eggs
  • 1 1/2cups vegetable oil
  • 1 (8 ounce) can rushed pineapple, drained
  • 1 cup nuts, chopped
  • 1 teaspoon vanilla
  • 2 cups mashed bananas

Preheat oven to 350.  Mix dry ingredients in large bowl.  Make well in center and fill with eggs, oil, pineapple, nuts, vanilla, and bananas.  Stir lightly, do not beat.  Pour into greaased and floued tube pan or loaf pan.  Bake for 75 minutes or until no cake appears on a toothpick when inserted into it.

Tips for variations I to make healthier:

  1. Use oat flour
  2. Eliminate nuts (I have done that, since one of my daughters has a nut allergy
  3. Use less sugar
  4. Substitute sugar with apple sauce
  5. Use Canola oil (I used canola oil)
